Home Made Chai

I have been experimenting with chai lately. Not the boxed kind, but with homemade chai. Here is the best recipe I have come up with so far,

Bring 16 ounces of water to a boil,
add 6 teaspons of black tea,
add honey(one or two ounces), cinnimon(one tblspoon), suger(two packets),
reduce heat and simmer for 3-5 minutes, depending on desired strengh.
Pour water through a filter to catch the tea leaves.

You now have a concentrate that you can mix with heated milk to make chai. Feel free to leave a comment with your own recipe.

Tazo (the Starbucks tea-distributors) makes some really good chai teabags/tins. I got a tin of loose-leaf stuff for my sister as a gift, and really like it myself. I brew it like regular loose-leaf black tea, and then add milk and honey. The result is a lot like the stuff you'd get at a coffee/tea place or make from a powdered mix, but not so overpoweringly sweet. I also have two of the tea-bag versions of this tea, but haven't tried it yet, although from what I've heard it's just as good. I generally can't drink chai because it's sooo sweet, but made this way it can be sweetened to taste, and the flavor has a lot more depth.

The over sweet taste of most chai is why I make my own at home. I can customize it. Chai is actually the Indian word for "tea". Chai is also the name of the process of making the tea. Usually tea and milk mixed with spices. By brewing a concentrate you can just add milk when ever you like. I like Oregon Chai personally, although I think it is over sweet when used in the directed proportions. They are really a great company. Oregon Chai is organic, and fair trade. Also if you are Jewish it is one of the only Kosher options on the market. BTW if you stop by tunnel city you can request your chai made with less concentrate and it will be less sweet.
